Cocoa and Chocolate
This Peruvian Technical Standard applies to cocoa paste or cocoa / chocolate liquor, and to cocoa cake, as defined, for use in the manufacture of cocoa and chocolate products. These products may also be sold directly to the consumer.

This Peruvian Technical Standard establishes the requirements, classification, sampling, testing methods, packaging and labeling for cocoa beans. Recommendations regarding storage and disinfection are given as a guide in Annexes G and H respectively. Annex I is for informational purposes only and establishes a sampling procedure for preliminary quality analysis that can be adopted by agreement of all interested parties.
